Flourless Fat Free Pancakes

A perfect guilt-free breakfast or healthy snack that is simple and easy to make. Enough to curb the sugar craving before you reach for that chocolate bar.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2 pancakes

Ingredients
1 large ripe banana (or 2 small bananas)
1 pinch of cinnamon
2 egg whites
1 handful of berries of your choice (I chose raspberries)
A sprinkle of pure icing sugar

Method
Firstly, finely slice the banana before mashing it into a lumpy mixture.

Add a pinch of cinnamon and then pour banana mixture into a mixing bowl.
Seperate two egg whites from the egg yolk and add to the banana mixture. Whisk using an electric whisk for 30secs-1min (depending on preferred consistency).

Heat a tsb of oil in a pan and circle around the pan before emptying the oil back out. Pour half of the combined mixture into the hot pan and cook for 1 min. Turn the pancake over, sealing the other side for an additional 1 min (times may vary depending on mixture consistency).
Repeat this step for the second half of the mixture.
Plate up the pancakes and serve with a small handful of the berries and sprinkle with icing sugar.

And Voila! It really is that simple!
