Makes: 2 servings
Ingredients
2 large eggs
1 med- large ripe banana
1/4 tsp cinnamon
Method
Using a fork mash the banana in a mixing bowl. The consistency should be relatively smooth but some small lumps are okay.
Add the 2 eggs and cinnamon. Mix thoroughly.
Pour the batter into a hot, greased pan. Cook both sides until golden brown.
Serve with fresh fruit, syrup and/or dusting of icing sugar.
