This delicious spinach and cheese quiche is a crowd pleaser
This quiche is quick, easy to make and indulgent. The spinach and cheese filling and brown rice base make this a delicious brunch or lunch. It is gluten free, low FODMAP and can be made lactose free. It is a family favourite.
Ingredients 1 large bunch spinach or 500g baby spinach, roughly cut
1 large lemon, zested and juiced
Salt and cracked pepper to taste
250g cream cheese (lactose free if required)
3 cups grated cheese (lactose free if required)
2 cups cooked brown rice
Preheat the oven to 220 degrees. Line a quiche tray with baking paper.
To make the filling
Place the spinach, lemon zest and juice in a frypan on medium heat. Sauté the spinach until just cooked.
Adding the lemon zest as well and the juice enhances the flavour
Add the cream cheese to the spinach, stir to combine. Season with salt and cracked pepper, to taste.
Reduce the heat on the frypan to low. Beat 1 egg and add to the spinach and cream cheese mixture. Stir to combine.
Add 1 cup grated cheese and stir to combine. Remove the frypan from the heat once the cheese has melted.
To make the base
Place the cooked brown rice in a bowl. Beat 1 egg, add to the rice and stir until combined.
Spoon the brown rice and egg mixture into the quiche tray. Using a spoon, spread the rice evenly around the surface of the quiche tray making sure there are no gaps. Press the rice down firmly to make the base.

To assemble the quiche
Spoon the spinach and cheese mixture into the quiche tray, spreading evenly over the the brown rice base. Gently flatten the surface.
Gently flatten the spinach and cheese filling with the back of a spoon or knife
Evenly sprinkle the remaining cheese over the surface of the quiche.
Evenly sprinkle the cheese
Bake for 20 - 25 minutes, until the cheese is golden.
Cool and serve immediately.
Delicious, moorish and great for brunch or lunch
For a lighter version, exclude the grated cheese from the filling and use 1 cup of grated low fat cheese on the top.
