Chuck in flour, baking powder, salt and sugar (optional - for savoury pancakes leave out completely, for sweet version add to your liking)
Add milk and vanilla. Whisk till smooth
Through in coconut and stir. Cover and leave to sit for 15 minutes (if you can - this is not absolutely neccesary)
Heat a small fry pan on medium/high and add a small chunk of butter to melt. Pour in about 1/3 cp of mixture. Cook for 2-3 minutes or until bubbles appear
Flip pancake and cook a further 1-2 minutes or till cooked through. Set aside on a warm plate and continue until mixture is used. Should make 4 medium sized pancakes. Serve with maple syrup, fresh fruit, cream or any combination. Scrummy!
It might be quite yummy to cook these in that 'Melrose' Organic Coconut Butter, that is all the rage at the moment... I have some and it is also very nice just stirred through hot rice; added to Indonesian or Malay curries, it adds another dimension and depth. Just a thought! Some folk have told me they even stir this stuff into their Lattes, to get their daily hit, as it's supposed to increase your metabolism!!!
