Fluffy Custard Cake

For anyone who loves custard and loves cake, with a fluffy custard cake, you can have both at once. Fluffy custard cake is easy to make, and leaves you with a delicious cake with a lower layer of creamy custard and a top layer of fluffy cake.

Preparation Time: 15 minutes
Cooking Time: 40-60 minutes
Makes: 8 servings

1/2 cup unsalted butter
2 cups milk
4 eggs, separated
4 drops or white vinegar
1 1/4 cups icing sugar
1 tablespoon water
1 cup plain flour
1 teaspoon vanilla extract
Extra icing sugar, to dust

Preheat the oven to 160C. Lightly grease a deep sided slice baking tray.

Melt the butter, then set this aside for a moment.

Heat the milk until it is luke warm. Set this aside, too.

Beat the egg whites until they become soft, airy peaks. Add the vinegar and beat it through. Set this aside.

In another bowl, beat together the egg yolks and icing sugar until creamy and pale.

Add the melted butter and a tablespoon of water, then beat until well combined.

Fold in the flour until just combined.

Beat in the milk and vanilla until all the ingredients are combined and the mixture is smooth.

Fold in the egg whites.

Pour the cake batter into the baking dish.

Bake for 40-60 minutes, or until golden.

Allow the cake to cool, then dust with some icing sugar.

Once the cake is cool, sslice it up, and serve.
