Light, fluffy and delicious.
For this recipe to get the perfect round shape you will need a mini fry pan and you can get them for $2 at Kmart. If you can't get one you can simply make it in a larger fry pan.
Ingredients 2 eggs
1 tablespoon of crumbled smooth feta cheese
1 tablespoon of thinly sliced brown onion
bbq sauce in a squeeze bottle (optional)
Cooking oil spray rice bran or coconut is best
2-3 pieces of rocket (optional)
Start with two bowls and separate the egg whites from the egg yolks.
With a beater mixer beat the egg whites until fluffy, almost until stiff peaks form.

Once egg whites have been beaten add in the egg yolk and whisk them in until just incorporated.
For the onion use a mandolin to slice the onions very thin. A knife will work just the same if you can cut them really thin with it.
Crumble the feta cheese so it is easy to spread over the egg when cooking it.
In the small fry pan spray with cooking oil spray and heat on high for 1-2 minutes until hot.
Pour the egg mixture in the centre and it will spread out.

Turn the heat to low and sprinkle over the onion, and then the feta cheese.
Add in the onion and feta cheese
Cook for about 2 minutes on low and the egg should be ready to flip.
While its cooking spray a large fry pan with cooking oil spray and heat on high.
To keep the perfect shape, lift up the small fry pan and quickly flip it upside down into the larger fry pan to cook the other side. This works better than trying to flip it in the little pan.

Continue to cook for 1 minute until the egg has cooked through.
Place egg in the centre of a serving plate and drizzle the barbeque sauce around the plate and put some rocket on top and serve.
