Frangipane Galette

This sweet treat, also known as the 'king cake' or 'galette des rois' is traditionally baked and eaten during epiphany. It is made of puff pastry with almond paste filling. It is really easy to make and is delectable. It is crunchy on the outside and soft and creamy in the inside.

Preparation Time: 15 minutes
Cooking Time: 40 minutes
Makes: 6 servings

2 frozen puff pastry sheets (with edges trimmed to form a circle)
100g almond meal
75g sugar
1 egg
50g softened butter
1 tsp almond essence
1 egg yolk, for brushing
Icing sugar, optional

To make the filling, beat softened butter and sugar until pale and creamy. Then add in the egg, the almond essence and mix until well incorporated.
Sift in the almond meal and stir to combine.

Preheat oven 175 degrees (fan-forced).

Place 1 pastry sheet on the counter, spread the filling leaving 2-3 centimetres around the edges. Brush the edges with the egg yolk. Cover with the other sheet.

Gently press around the edges (I used a fork) to seal the pastry. Brush the pastry with the remaining egg yolk.
Then using a knife, draw light lines to make a criss cross pattern on the top of the pastry. Make sure not to cut through the pastry. Make little holes in each diamond shapes.

Bake for 40 minutes. Check after 25 minutes and if the pastry is getting too dark, cover with aluminium foil. Once removed from the oven, sprinkle with icing sugar.
