French Ratatouille

Ratatouille is a gorgeous classic French dish that can be enjoyed for breakfast, lunch or dinner. It is quiet hearty on its own and is full of vegetables.

Ready to Serve

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 4 servings

Simple Ingredients

1 brown onion
2 garlic cloves
1 red capsicum
1.5 zucchini
1 eggplant
2 tins of diced tomato (or 8 fresh)
Handful of fresh basil and thyme
Olive oil for cooking

Dice the onions and garlic and add them to a hot pan with oil-saute.

Onions and Garlic, the start of any good Dish.

Dice the eggplant and add it to the sauteed onions and garlic.

Chop up the zucchini and capsicum into large chunks.

Colours for Health

Once the eggplant has started to brown add the zucchini and capsicum, stir.

Browned Eggplant

Add the remaining tins of tomato, herbs and seasoning and bring to a simmer.

Allow to simmer

Simmer and stir occasionally for half an hour or until the eggplant has softened.

Serve hot.

Breakfast Option, my Favourite

Ratatouille can be eaten at any time of the day. I like it with poached eggs for breakfast, crusty bread for lunch or as a side to rice for dinner.

I keep thinking I want to eat ratatouille again, even though it's still Summer... now you've inspired me.
