Ingredients 1 x 400g pack of stuffed fresh pasta such as tortellini (with filling of your choice)
2 x rashers of bacon
2 x large handfuls of fresh spinach, washed
1 x large knob of butter
1/4 cup of thyme leaves
Parmesan cheese to grate
Scattering of croutons (optional)
Fry the bacon in a frying pan until crispy and set aside to cool.
Chop the bacon into small pieces.
Cook the pasta as per packet instructions then set aside.
Melt the butter in a large frying pan.
Add the thmye and gently cook for a minute or so.
Drain the pasta then add to the frying pan and stir until all shells are coated in thyme butter.
Add the spinach to the pan, stirring for a minute or two until it begins to wilt.
Turn the mixture out onto two plates and grate over parmesan cheese to serve.
Croutons make a great addition to add a crispy texture.
