Fried Chicken with Crispy Vegetables in Oyster Sauce

One of my mom's creations, this fried chicken is a quick and healthy dish which will leave most veg-haters kids smacking their lips, asking for more.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 4-6 servings

Ingredients
500 g chicken drumsticks ( cleaned and cut into pieces)
1 capsicum diced
1 onion sliced roughly
1 carrot (peeled and sliced)
100 g of mushroom sliced thinly
1/2 tsp of sliced garlic
Diced vegetables

1 tbsp soya sauce
1 tbsp oyster sauce
salt
pepper

Method

First, marinate the chicken with the oyster sauce, soya sauce, salt and pepper and leave aside.

In a saucepan, heat 1 tbsp of olive oil and add the onion and garlic. Stir fry on high heat until the onions turn pink-brownish in color. The success behind this recipe is the caramelized taste of the onion, so, make sure that the onion has a nice pink-brownish color without burning it down!

Fry onions until slightly pink-brownish in color


At this stage, you can add the vegetables but I prefer them crisp, so I add them at the last minutes of the cooking process.

On high heat, add your chicken pieces, mix well, cover and cook on low heat until sauce thickens.

Add the chicken
Cook until the sauce thickens, then add the vegetables


Toss in the vegetables if you have not yet done so.

Mix well, cover and take off heat.

Serve hot with bread and green salad.

Useful tips: If you have leftovers, flake the chicken and use it together with the vegetables as a filling in bread, sandwiches, rolls or flaky pastries.
