Something of a cross between a fruit mince pie and a stollen roll, this mincemeat log will go down a treat for Christmas.

Makes: 12 servings
Ingredients
250g white bread flour
7g fast action yeast
¼ tsp salt
135ml almond milk
50g margarine
1 egg
411g jar of fruit-mince
200g marzipan
25ml water
25g glace cherries
50g pistachios
50g apricot jam
100g icing sugar
Method
Mixt the flour, yeast, margarine, egg, and milk together to form the dough.
Knead the dough for five minutes and then prove for about an hour.
Roll out the dough, spread over the fruit-mince, and tear up pieces of marzipan to scatter on-top.
Roll up the dough like a swiss roll, and prove for another half hour.
Bake in an oven pre-heated to 220 ༠C/ 200 ༠C fan/425 ༠F/7 Gas.
Heat the jam with 10ml water and spread over the bread.
Scatter cherries and pistachios on top.
Mix one tablespoon water with icing sugar and drizzle it over the top.
