Fruit Salad Icy Poles

These tasty fruit salad icy poles are a great snack and will help beat the heat on a hot summer day. The kids will love to help assemble the rainbow colours of this delicious icy pole. These cool snacks are also a great way to introduce different fruits to fussy eaters.



Fruit salad icy poles


Preparation Time:10 minutes
Cooking Time: 6 hours or until set
Serves: 6

Ingredients
1/2 ripe pineapple or 250g frozen pineapple
250g strawberries halved
250g blueberries
2 ripe bananas mashed
4 ripe kiwi fruit mashed

Method
Place pineapple into a blender and purée until smooth.
Pour pineapple mixture into moulds.
Add a quartered strawberry to each mold.



Fresh and frozen fruit can be used to create the fruit salad icy poles

Add kiwi fruit mixture around the strawberries.
Add blueberry layer to the mould. Top with a teaspoon of water if necessary to form a seal.
Add banana layer.
Freeze for six hours or until set.

Tips
-Icy pole moulds are available at most supermarkets, discount and kitchenware shops.
-Use frozen pineapple, strawberries, blueberries and banana for quicker freezing time.
