Fruit Shooters

These fruit shooters are great for any time. Non alcoholic and made with organic coconut milk. Healthy and delicious. I like to have them as is when I want a little fruit boost, but they would go great on the side of any dessert too.

Strawberry and Mango Fruit shooters


Preparation Time: 5
Cooking Time: 0
Makes: Serves 2 -4

Ingredients
For the strawberry
6 strawberries
1/2 teaspoon of coconut palm sugar
1/4 cup of coconut milk
Sprinkle of shredded coconut
For the mango
8 pieces of frozen mango
1/4 cup of coconut milk plus 2 tablespoons
1/2 teaspoon of coconut palm sugar
Sprinkle of shredded coconut



Method
Wash and chop strawberries and place in the blender with the coconut milk and the sugar.
Blend on high for 1 minute.

Scrape down the sides of the blender


Some of the mixture will stick to the sides. Using a spatula scrape down any mixture that is on the side.
Blend again for thirty seconds and turn off.
Pour mixture into two shot glasses and place in the fridge while you make the mango.
Add frozen mango to the blender with the milk and the sugar.
Frozen mangoes make this one a bit thicker, that is why you need the extra milk.
Blend on high for one minute.
Scrape down the sides of the blender again, and blend for another thirty seconds.
Pour mixture into shot glasses and take strawberry shots out of the fridge.
Sprinkle a little shredded coconut on top of each.

Serve one of each or serve one per person if you are serving alongside a dessert.
For a layered effect add in an extra 2-3 pieces of mango to your mango mixture to make it thicker.
Blend the mango shooter mix first, fill two shot glasses half way and place in the fridge.
Clean blender and make your strawberry mixture.
Slowly pour strawberry mixture on top of mango mix.
Garnish with shredded coconut and serve.

The left shot in this photo was with original recipe, and the right side one was when I tried making this adding extra mango. The left didn't layer as well.

Notes
Coconut milk from the bottle is best, not the canned stuff.
It's not too expensive either. Costing under $4 a bottle.
It's a great non dairy replacement.
Other flavour ideas to try
-Honeydew melon, coconut milk and mint.
-Banana, coconut milk and cinnamon.
-Pineapple, lime and coconut.
