Fudgy Chocolate Cake

I've baked a lot of vegan cakes over the years. But once I started omitting refined sugar and flour from my diet, cakes seemed like an impossible dessert to make. Well, I proved myself wrong with this delicious, moist, fudgy chocolate cake!



Fudgy Chocolate Cake


Preparation Time: 5 minutes
Cooking Time: 60 minutes
Makes: 8 servings

Ingredients
1 cup rolled oats
1/4 cup shredded coconut
2 tbs chia seeds
1/3 cup cacao powder
1 tsp bicarb soda
2 ripe bananas
1/4 cup rice malt syrup
1 cup water
1/4 cup coconut oil, melted

Method
Preheat the oven to 180C/350F.
Mix all ingredients in a high speed blender until a smooth batter is created.


Fudgy Chocolate Cake

Pour the batter into a greased or silicone loaf tray.
Bake for 50-60 minutes. It will still be quite moist, but the top will be dark brown, and the cake will be somewhat firm.
Let the cake cool for a few minutes in the pan before sitting it on a cooling rack to cool completely.
Store in an airtight container.
