Garlic and Goats Cheese Stuffed Chicken

Stuffed chicken breast


This recipe is really quick to prepare but has lots of great flavours that work really well together. Once cooked, the goats cheese will be oozing out and pepped up with the garlic.

Preparation Time: 10 minutes
Cooking Time: 20-25 minutes
Makes: 2 servings

Ingredients
2 skinless chicken breasts
2 generous slices of soft goats cheese
2 cloves garlic
1 large tomato
1/2 tsp mixed dried herbs
Olive oil
Crushed black pepper and sea salt

Method
Preheat oven to 180c fan.
Make a slit down the length of each chicken breast.
Insert a slice of soft goats cheese into the opening and crushed garlic of each chicken breast.

Place two slices of tomato on top.

large tomatoes are best to use


Sprinkle over some dried herbs, salt and pepper.
Drizzle olive oil over the top and then place on a baking tray or shallow casserole dish.

Pop into the oven and bake for 20-25 minutes until the chicken is cooked through.
