Ingredients 300g green prawns with the tails on
3 medium tomatos
2 heaped tsp crushed garlic
Chicken stock cube
1tbs dried mixed herbs (basil, oregano, parsley)
1/4 cup of ricotta or danish fetta cheese
salt & pepper
1 cup of boiled white rice
Roughly chop the tomatos and put them into a saucepan with the herbs, chicken stock, garlic & chilli.
Bring to the boil and then simmer for 10 minutes until the sauce reduces and thickens.
Season to taste.
Add the cheese to make the sauce creamy.
Add the deveined prawns and cook until they turn pink.
Serve on a bed of rice and garnish with a sprinkle of cheese.
