Pizza Bread is great for entertaining, or to make a special accompaniment to soups and pasta dishes It's very easy and everyone will enjoy it.
Preparation Time: up to 40 minutes
Cooking Time: 10 minutes
Ingredients 4-6 cloves crushed garlic
6-8 sun dried tomatoes
3 tablespoons olive oil
1 cup flour
1/2 teaspoon salt
1 1/2 teaspoons dried yeast
1/2 cup warm water
1/2 teaspoon dried oregano and/or thyme
1/3 cup cheese (tasty, Parmesan and/or mozzarella)
Pepper and extra salt to taste
Preheat oven to 220 degrees
Add the yeast and sugar to the water in a small bowl or jug. Set aside for 5 minutes for the yeast to activate.
In a large bowl, add the flour, salt, pepper, tomatoes and dried herbs. Combine with a wooden spoon.
When the yeast has activated, add 3/4 of the water to the bowl along with 1 tablespoon of oil. Mix with a wooden spoon, adding the remaining water gradually, until the mixture comes away from the bowl and forms a ball. All of the water may not be necessary.
Remove dough from the bowl and knead on a floured bench until smooth. Roll out into a 20 cm round, make sure to flour the dough and the rolling pin well.
Cover with a tea towel and leave to prove in a warm spot for at least 10 minutes, 40 minutes will produce best results. Top with remaining oil, garlic and cheese.
