Garlic & Rosemary Lamb Leg Mini Roast

Mini lamb roasts are a great alternative to a large leg if you are looking for a faster cooking time and carving. In just under an hour, you can get a tasty roast for family lunch or dinner.



Preparation Time: 20 minutes
Cooking Time: 30 minutes
Makes: 4 servings

Ingredients
500g lamb leg mini roast
1 garlic clove, crushed
2 tablespoons fresh rosemary, finely chopped
salt and black pepper
olive oil
roasted potatoes & sweet potatoes, to serve

Method
Preheat the oven to 220C fan-forced.

Brush the lamb with olive oil and rub with garlic, rosemary, salt and black pepper. Place the lamb on a baking tray and roast for 20-25 minutes for 500g.

Remove the lamb from the oven, cover with foil and let it rest for 5 minutes before carving.

Serve with roasted potatoes & sweet potatoes.
