A good quality piece of meat doesn't need to be masked in fancy flavours and sauces. A simple marinade can enhance but also means a quick, simple but delicious meal.

Ingredients
Lamb rack with 3 cutlets per person
Olive oil
3 garlic cloves
Sprig of rosemary
Method
Preheat oven to 200 degrees C.
Pour a large glug of olive oil in a mortar.
Add in the rosemary leaves and garlic then pound with a pestle.

Mortar & Pestle
Spread the marinade over the rack of lamb.
Sear the lamb in a hot pan for 2-3 minutes.
Transfer to the oven and cook for around 15 minutes depending on how pink you like your meat.
Slice the cutlets from the rack and serve.
