Garlic & Rosemary Roasted Brussels Sprouts

A simple, flavoursome recipe is all that is needed to enjoy these nuggets of nutrition.

Just one cup of these sprouts provides you with your recommended daily intake of vitamin K, and they are also loaded with calcium, chlorophyll and vitamin C.

Why not enjoy these as a side for your next roast, or mix through with a combination of other roasted winter veggies?



Preparation Time: 3 minutes
Cooking Time: 30 minutes
Makes: 4 servings

Ingredients
500g brussels sprouts, trimmed, halved
4 sprigs rosemary, leaves only
3 teaspoons garlic, minced
extra-virgin olive oil, to drizzle

Method
Preheat oven to 200C.
Scatter the brussels sprouts, rosemary and garlic across a lined baking tray, and drizzle generously with the olive oil.

Roast for 30 minutes, tossing a few times through out.

When browned and cooked through, remove from oven and set aside. Serve immediately with a side of meat or other roasted vegetables.
