This is my favourite thing to make at Christmas time. Ginger bread cookies are a great inexpensive heartfelt gift. They are great fun to make with kids and great with afternoon tea, so they are pretty good all year round.

My Gingerbread men.
Preparation Time: 50 minutes including chill time
Cooking Time: 10 minutes
Makes: 10-20 depending on size
Ingredients
90 g butter softened (I use nuttelex instead for dairy free)
1/2 cup coconut palm sugar (or any sugar you have on hand)
1/3 cup self raising flour
1 cup plain flour
1 egg
1 teaspoon of vanilla
1 tablespoon of ground ginger
Method
Preheat oven to 180 degrees celsius.
With an electric mixer cream the butter, sugar and vanilla until pale and creamy.
Add in flours and ginger and mix until all combined.
Knead dough on a floured board, and form into a disc.
Wrap with cling wrap and place in the fridge for 30 minutes.
Take small amounts of dough out of the fridge and roll between two pieces of baking paper. Roll out to 5 mm thick
Flour your cookie cutter of choice and cut out shapes.
Place on a tray lined with baking paper.
Take out of the oven and set aside to cool.
For gingerbread men you can make some icing and use it to secure on some smarties for eyes and buttons, and draw on a mouth. I prefer mine plain as they are easier to stack when wrapping.

Star shapes are another favourite shape I like to make, these are some just rolled out waiting to be baked.
