Gluten and Dairy Free Blueberry Muffins

Everyone loves muffins.

They are filling, tasty, and super convenient. However, most are filled with refined sugars, large amounts of gluten and stacks of dairy.

So to make muffins more child friendly, we've removed all of the nasties, but kept all of the flavour!

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 12 servings

2 cups quinoa flour
3 tsp. baking powder
½ tsp. sea salt
1 ¼ cup Erythritol (or ¾ cup Honey)
1 egg
1 cup unsweetened almond milk
¼ cup coconut oil
1 cup fresh blueberries

Preheat oven to 205 degrees Celsius (400F)
Combine dry ingredients in a bowl and mix well
Make a well in the dry ingredients bowl and add wet ingredients, stirring as you go
Combine all ingredients well and then lightly stir through the blueberries at the end
Add mixture into the muffin tray
Bake for 25 minutes!

This is just an example of healthy recipes that can still be tasty.

It is a great snack to share with your kids in their cubby house, or as afternoon tea when they come home from school.
