This is one of my favorite recipe for my little one. What I love about this cake is that it is packed with almonds and apples and so healthy for everyone in the family. This apple cake is delicious served with a warm cup of coffee, tea or even custard. This recipe can be easily doubled to serve more people.
Ingredients 1 large red apple
1 cup almond meal
1/2 teaspoon baking powder – gluten free
1/8 cup (30 ml)extra virgin olive oil
1/8 cup raw or regular honey
1/2 teaspoon vanilla bean paste
Preheat your oven to 160 C .
Combine almond meal, baking powder, olive oil, honey, vanilla and eggs in a bowl.
Mix it thoroughly.
Dice apples in small pieces.
Fold in the apples in the batter gently.
Prepare a 10 cm baking pan with baking paper lining the base and sides of the pan.
Transfer the mixture into the pan making sure all the apples are pressed in the batter properly.
Bake for 60 – 80 minutes.Check after 45 minutes to make sure the cake is still fine. You can check if the cake is done with a skewer. If it comes out clean, it is done. If not, leave it in for bit longer.
Rest the cake in pan for 30 minutes before removing.
