Gluten Free Mini Macaron Biscuits

These little mini biscuits came about by experiment and happy accident, and only after testing the baked goods, did I realise their resemblance in taste to the mighty macaron.

Gluten Free Mini Macaron Biscuits

Preparation Time: 10 minutes
Cooking Time: 12 minutes
Makes: approx 35 servings (depends on your preferred size of biscuit)

140g caster sugar
200g almond meal
50g coconut flour
30g rice flour
20g corn flour
2 egg whites
1/2 tsp almond essence
Icing sugar for dusting

Pre-heat oven 180 degrees and prepare a tray with greased baking paper.

Combine sugar, almond meal, rice flour, corn flour, coconut flour together with a wooden spoon.

In a separate bowl, whip egg whites until stiff either with blender or by hand. Half way through, add 1/2 tsp almond essence.

Fold stiff egg whites into sugar and flour mixture above until combined.

Roll the mixture into little balls and flatten slightly with your fingers onto the baking tray

Bake for 12 minutes

Remove from oven and leave to cool completely on a wire rack

Sprinkle with icing sugar when cooled.

Slightly chewy slightly crunchy, delicious with a nice brew.
