Ingredients 2 bananas
2 tbsp sugar or 1 tsp of brown rice syrup
2 tbsp almond meal
1.5 cups of good quality milk
1 hand full of macadamia nuts (roughly chopped)
flour - enough to make a smooth dough
1/2 cup raspberries
1/2 cup blueberries
Butter or coconut oil for frying
Ingredients for dressing
1/4 cup water
1 tbsp chia seeds
1/2 lemon - juice of
1 tsp honey or brown rice syrup
Whisk in the eggs, sugar, almond meal, milk and macadamias.
Add as much flour as needed to make a smooth dough not running anywhere then plop in the berries and crush a few to spread the flavour and colour a little.
Heat up a frying pan to hot.
Add butter or oil and spoon out the dough then turn the heat down a little and bake until golden brown.
Its a good idea to mix and chill the dressing first and pour it over the pancakes to cool them down quicker for hungry kids who are ready to enjoy their feast!
