Gozleme is our go to meal. It all starts with a delicious dough that is ready in no time.
So many delicious combinations to suit everyone in your family. My personal favourite is a herb ricotta filling, but why not try with savoury mince, spiced fetta or chicken and mushroom. You are really only limited by your imagination. Give it a try tonight.
Ingredients 250 grams of self-raising flour
225 grams of greek yoghurt
˝ teaspoon of salt
Additional flour for rolling
Light ricotta cheese
Fresh herbs or herb stir in paste.
Salt and pepper
Olive oil for frying
For: Ricotta filling
In a bowl mix light ricotta and your favourite herbs. I used a stir-in Italian herb paste.
Remember to season generously.
For: Gozleme dough
In a mixing bowl whisk the greek yoghurt until it is flat and quite runny.
Add salt and stir again.
Add flour and mix with a wooden spoon. It will take a minute or two to combine. It will look very dry.
Turn out on to a bench and knead for 1-2 minutes until dough forms a ball.
Place dough back into bowl and cover.
Leave for 15-20min to rest. This will make the dough easier to roll out.
Lightly dust your bench and rolling pin.
Section dough into 6. Roll on section of dough into a rough circle, as thin as is possible. It will end up around the size of a dinner plate.
