Grated Coconut Sweet Balls

Recipe Yum writer, Art describes the art of preparing clarified butter or as it is commonly know, 'Ghee'. As soon as that recipe mentioned caramelised ghee coating the pan in which the butter was melted in, I remembered a sweet dish my Mother used to make.



Pan used to make ghee


Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 5-6 servings

Ingredients
Vessel with caramelised remnants of ghee
2 cups grated coconut
Approx. 10 roasted & broken cashews
1/2 cup palm sugar / powdered jaggery
1-2 pinches powdered cardamom



Pan used to make ghee


Method
Add the roasted cashews to a hot pan that's been used to make ghee.
Let them soak a while in the caramelised butter remnants.
Add the grated coconut and palm sugar/jaggery.
Mix the ingredients well until they begin to solidify.
Keep stirring without letting any stick to the bottom of pan.
Take it off the stove and change contents to another bowl.
Now mix the cardamom powder in to this.



Pan used to make ghee


After the mixture cools down marginally it can be kneaded into sweet balls and they're ready to be stored / served.
