Green chilli seafood-mushroom fry

The seafood mushroom has got different names like needle mushroom, lily mushroom and so on. This is one of the edible mushrooms frequently used in East-Asian cuisine.

The cultivated mushrooms are white in colour since it is not exposed to sunlight. The wild ones are usually coloured brown or dark brown.

Preparation Time: 25 minutes
Cooking Time: 5 minutes
Makes: 2 servings

Ingredients
150g seafood mushroom
1/4 tsp turmeric powder
1 tsp chilli powder
1 sprig of curry leaves
1-2 green chilli
2-3 shallots
Salt to taste
3 tsp oil

Method
Cut the stem end of the mushroom and wash it in cold water. Drain and add 1/4 tsp salt and 1/2 tsp turmeric powder into the mushroom. Let it sit for 5 minutes. Then wash them again in cold water.

This is done to make sure the mushroom is good and not poisonous. You can avoid this step if you are sure about the quality and type of mushroom.

Then add turmeric powder, chilli powder and salt into the washed mushroom. mix well to combine. Cover and let it sit for 15 minutes.

Peel, wash and slice the shallots, green chilli and curry leaves.

Heat oil in a pan. When the oil is hot, add the curry leaves and green chilli. Let it fry for a few seconds. Then saute the shallots until golden brown.

Add the marinated mushroom into the pan. Mix well and cook for 5-8 minutes on medium-low heat. Stir occasionally.


Fry the mushroom

Enjoy the spicy mushroom fry hot with rice.
