Green Cream Soup

This is such a creamy and delicious soup without any added cream. It is simple but very tasty.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 3 servings

Ingredients

500 g of frozen or fresh peas
One onion
Olive oil
Salt and pepper
Parmesan cheese
Thyme

Method
Heat a tablespoon of olive oil in a pan and then sweat the onion in it for 4-5 minutes.
Season the onion with salt, pepper and thyme, fresh or dried.

Add the peas, fresh or frozen, don't use peas from a can. You can add frozen peas directly to the pot, you don’t need to thaw them.

Add water or stock to cover the peas and bring to a boil. Reduce the heat and let simmer for 10 minutes, until the peas are cooked.
Blend the soup until you reach the desired consistency.
Serve the soup with parmesan shavings and pepper.
