Don't let the stark green colour of this risotto put you off; it is a rich, creamy delight of goodness.

Makes: 6 servings
Ingredients
500g frozen spinach
125g frozen peas
1L vegetable stock
100g grated parmesan
1 onion
75g margarine
200g arborio rice
Method
Cook the frozen spinach and peas in the microwave on full power. This should take about fifteen minutes.
Put the spinach and half the peas in a blender with a little bit of water, and then stir in the remaining peas.
Chop the onion and fry in 50g margarine.
Gradually add the vegetable stock, very slowly, until it is absorbed. This should take about twenty minutes.
Stir in the spinach mixture, remaining margarine, and parmesan.
