Green Tomato Chutney

If you grow your own tomatoes, then at a certain point in time, you'll find that they have stopped ripening, and that you are left with several green tommies. Inedible while raw, they do however, make great chutney.

Preparation Time: 35 minutes
Cooking Time: 2 hrs
Makes: 2.3kg


1.4kg green tomatoes
4 apples
1 large onion
225g sultanas
225g demerara sugar
2 tsp salt
400ml malt vinegar
1 tsp ground ginger
1/2 tsp cayenne pepper
1 tbsp mustard powder

Peel, core, and dice the apples.

Peel and dice the onions.

Slice the tomatoes thinly, and then put them in a saucepan with all the other ingredients.

Bring to the boil, then simmer until it has reduced to a thick consistency.

Pot and cover the chutney.
