Griddled Chicken with a Creamy Mustard Sauce

This is an easy way to jazz up what could be a bland piece of chicken, whether it is a boned breast, leg or thigh.



Grainy Mustard


Preparation Time: 5 minutes
Cooking Time: 10-15 minutes
Makes: 2 servings

Ingredients
2 boned chicken pieces (breast, thigh or leg)
Olive oil
250g crème fraîche or soured cream
A tablespoon or dessertspoon of grainy French mustard
A handful of chopped flat leaf parsley

Method
Drizzle the chicken pieces with a few drops of olive oil.

Heat a griddle until smoking.

Place the chicken pieces on the griddle and cook on both sides until they are well seared with the lines of the pan.

While the chicken is cooking, prepare the sauce.

Heat the cream gently in a small saucepan until it starts to thin.

Gradually stir in the mustard. You will have to be guided by your own taste buds.

Add the chopped parsley and raise the heat so that the sauce begins to bubble, thicken and reduce until it is the consistency of thick pouring cream.

Remove the cooked chicken pieces from the griddle, place on plates and serve with the sauce.
