Grilled Nectarines with Vanilla 'Cream'

Stone fruits and cream goo together like peas in a pod. Grilled peaches are a decadent breakfast, or can be considered a light dessert because they're so low in fat. Serve with vanilla Greek yogurt and you're laughing.

Preparation Time: 2 minutes
Cooking Time: 15 minutes
Makes: 2 servings

2 Peaches
50g Greek yogurt
Half a Vanilla pod
Tablespoon Agave syrup

Required ingredients

Slice the nectarines in half.

Place under the grill on a low heat, 'face' down for 5 minutes.

Turn over and grill for a further 8 minutes.

Pour the yogurt into a bowl and add the vanilla.

Add the syrup and whisk until all the vanilla is evenly distributed.

Remove the peaches from the grill and serve alongside a dollop of yogurt.

This is a surprisingly low fat recipe; Greek yogurt is high in protein, and the enzymes in the peaches will give you energy, not to mention the natural sugar, which caramelise beautifully when cooked.
