I love Mexican food and it has inspired me to make this sauce. I first ate this sauce with an enchilada in Las Iguanas restaurant and thought it was a genius use of ingredients. This guacamole style avocado sauce also goes really with both chicken and salmon. You can even eat it with tortilla chips as a dip.
Preparation Time: 7 minutes
Makes: 2 servings
Ingredients 1 avocado
1 small garlic clove
salt and black pepper
Take the juice from half a lemon and pour it in a small food chopper. Remove any pips.
Peel a garlic clove, cut it in half and add it to the food chopper.
Blitz this for a couple of minutes until the garlic clove has been chopped into smaller pieces.
Halve the avocado, scoop out the fruit and add it to the lemon and garlic.
Add a bit of salt and black pepper.
Blitz this to make a creamy sauce.
Take the sauce out into a small dish.
Serve with your favourite food and enjoy.
Garnished with a slice of lemon
It is best to consume the sauce the day you make it, the avocado goes brown if left too long. If you like extra garlic, another small clove can be added. If you like a bit of heat a small chilli can be added. A great optional ingredient is coriander (cilantro). Add a sprig of coriander with the avocado before mixing it in the food chopper.
