Ingredients 2 brioche buns
1 avocado, sliced
Approx 200 g halloumi, sliced
1 tsp oil, for frying
1 tsp vinegar, for poached eggs
Heat oil in a frying pan over medium heat. Slice the tomato and fry for 5 minutes. Add the halloumi and cook for 2 minutes each side.
Meanwhile, heat half a saucepan of water with 1 tsp of vinegar to medium high heat (not boiling). Using a spoon, stir the water in a clockwise direction before gently cracking eggs into the centre. Cook for 3 minutes before removing with a slotted spoon, draining and placing on your burger.
While the eggs are cooking cut each brioche bun in half and lightly toast.
To assemble your burger, add a layer of baby spinach to the bottom half of your burger bun. Then place the tomato followed by the halloumi, avocado and egg on top. Place the burger top on top.
