Ham Bone Minestrone

This winter warmer is both healthy and tasty. Minetrone is a great way to reinvent any leftovers you have in the fridge.

Preparation Time: 45 minutes
Cooking Time: 30 minutes
Makes: 6 servings

Ingredients
1 ham hock
4 cups of water
2 chicken stock cubes
1 tbs butter
1 large onion
3 cups of mixed vegetables (carrots, potatoes, beans, celery, cauliflower, zucchini)
2 tins of diced tomatoes
1 tbs garlic
1 tsp chilli flakes
1 tbs parsley
1 cup of pasta shells
salt and pepper

Method
In a large saucepan, brown the ham hock in some butter.
Finely chop the onion and add it to the pot with the ham hock.

Add the water and stock cubes and bring to the boil.
To the stock, add the garlic, parsely and chilli.
Boil for 35-40mins or until the ham on the bone becomes soft and begins to fall off.

Strip the bone of all the meat and remove the bone, leaving the ham and the broth.
Add the tomatoes and vegetables and allow them to simmer for 15mins.

Add the pasta in the last 15mins of cooking.
Season with pepper and salt and serve.
