Harrow Mess with a Blackberry Coulis

Practically everybody knows how to make an Eton Mess. My variation swaps raspberries and blackberries for the strawberries and is drizzled with a blackberry coulis. I call it Harrow Mess in recognition of the other famous public school that is a few miles away from my Pinner home.

Preparation Time: 15 minutes
Cooking Time: 5 minutes
Makes: 4 servings

Ingredients
150g blackberries
150g raspberries
4 shop bought meringue nests (you can make your own if you have the time)
A small pot of double cream about 225ml

For the Coulis
150g blackberries
50g caster sugar

Method
Wash the raspberries and blackberries and set them aside.

Lightly whip the cream.

Crush the meringues and fold them into the cream.

Lightly crush the raspberries and blackberries.

Stir them into the cream and meringe mixture.

Set aside whilst you make the blackberry coulis.

Put the washed blackberries into a small pan with the caster sugar and heat gently for about five minutes until the sugar has dissolved and the fruit is soft.

Push through a metal sieve and set the coulis aside.

Divide the cream, fruit and meringue mixture between four serving glasses.

Chill in the fridge for about half an hour, remove and drizzle with the coulis to serve.
