Ingredients 2 large potatoes
2 tbs olive oil
1 clove garlic, crushed
1/2 tsp rosemary, dried
salt and pepper, to taste
Preheat oven to 200C.
Peel potatoes and halve them lengthways.
With the cut side down on a chopping board, make thin evenly spaced cuts about 3-5mm apart to near the base of the potato. The cuts should not go through the base of the potato.Transfer potato to a baking tray lined with baking paper.
In a small bowl combine the oil, garlic and rosemary and stir to combine. Drizzle the oil mix over the potatoes taking care to get some between the potato slices without breaking the bottom of the potato.Season with salt and pepper.
