Healthier Chocolate Brownie

Moist, delicious and easy to make with cocoa or cacao and sneaky zucchini. It tastes just like a chocolate brownie and you won't notice it is healthier. I like it best warm but you will need to cool it if you want to ice it. This is a great dessert or for parties.



Healthier Chocolate Brownie
Moist chocolate brownie

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: 16-20 slices (depending on size)

Ingredients
1/2 cup olive oil
2 eggs
1 1/4 cup packed brown sugar
1 tbsp vanilla essence
1/2 cup cocoa or cacao
2 cups self raising flour (gluten free if required)
2 cups grated zucchini
Cocoa or cacao, to dust (optional)

Method
Preheat the oven to 170 degrees. Line a 20 x 30cm cake tin with baking paper.
Whisk the oil, eggs, brown sugar and vanilla essence in a bowl.

The brown sugar will dissolve as you whisk the ingredients

Sieve the flour and the cocoa into the wet ingredients. Stir to combine.
Add the zucchini and stir until combined.

Combine the zucchini in the mixture to form the batter

Pour the batter into the cake tin and bake for 20 minutes until a skewer comes out clean. Allow to fully cool in the cake tin.
Remove from the cake tin and dust with cocoa before serving.

Tips
This brownie tastes great with 2/3 cup macadamias, hazelnuts or walnuts.
I have replaced the flour with 2 cups rice flour and 1 tsp baking powder successfully before.
