Healthier Pasta and Chicken

Instead of ladelling calorific creamy cheesy sauce on top of your pasta dishes, why not try this dish which is sans-sauce, but still delicious.

Preparation Time: 2 minutes
Cooking Time: 30 minutes
Makes: 2 servings

Ingredients
4 boneless chicken thighs
Half a cup of wholewheat pasta
Half a cup of white pasta
1 cup of spinach
1tsp cream cheese
1 tsp of butter
Olive oil
Thyme
Black pepper
Half a lime

Method
Place the chicken thighs on a foil lined tray and season with thyme, pepper and a splash of olive oil.



Place in the oven, on the middle shelf, at 160 degrees/ gas mark 3 for 15 minutes.

Chop the onion, garlic and halve the lime.



Remove the chicken from the oven.



Add all chopped ingredients to the tray, toss and place back in the oven.



Add the pasta to a saucepan of boiling water.



Turn to a simmer and leave to cook (without a lid on) for 10 minutes.

Add the spinach to a hot frying pan with a splash of olive oil and black pepper. Add 1 tsp of cream cheese.



Keep an eye on the spinach and watch it slowly wilt for 2 minutes.

Remove the chicken from the oven.



Drain the pasta and plate up.

Serve with a side bowl of spinach.
