Ingredients 1 large avocado, peeled, pitted and mashed
1 large egg
2/3 cup peanut butter
3 tablespoons raw honey
¾ cup rolled oats
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon baking powder
1 tablespoon chia seeds
½ cup walnuts, chopped
2 tablespoons pumpkin seeds
Preheat the oven to 180°C and line the baking sheet with a parchment paper.
In a large bowl, combine avocado, egg, peanut butter and honey.
Then, add the oats, cinnamon, nutmeg, baking powder, chia seeds, walnuts and pumpkin seeds. Mix the ingredients until well combined.
Using a tablespoon measurement, drop the cookie dough onto prepared baking sheet and flatten slightly.
Bake the cookies for about 15 minutes.
The cookies could be stored for up to one week if you keep them in an airtight container inside the refrigerator.
