These healthy breakfast muffins are the perfect start to any day. Low in fat and high in fibre these muffins put a new and exciting twist on the definition of breakfast. Best served warm with a cup of tea or in lunches as a tasty mid-morning snack.
Ingredients 2 cups plain flour
3 tsp baking powder
½ cup raw sugar, plus extra for sprinkling
1/3 cup oats or wheat bran (or a mixture of both!), plus extra for sprinkling
1 tsp ground cinnamon
2 tbsp honey
1/3 cup vegetable oil (I used macadamia oil)
1 tsp vanilla extract
2 ripe bananas, mashed
Preheat oven to 180ºC.
Place dry ingredients (flour, baking powder, sugar, oats / wheat bran & cinnamon) in a bowel.
In a separate bowl mix banana, egg, buttermilk, oil, vanilla and honey until combined.
Pour banana mixture over dry ingredients and mix until just combined.
Spoon mix into 12 muffin cases and sprinkle tops with extra oats and a little raw sugar.
Bake for 25-30mins or until lightly browned and cooked when tested with a skewer.
