Healthy Broccoli, Corn off the Cob, and Pink Salmon Frittata
I had a few things left in my fridge and did not know what to make.
I had plenty of eggs so decided on a frittata with vegetables.
I used corn off the cob as this is far nicer in taste than the tins, however, if you are in a hurry, you can use tins or even frozen corn.
This recipe will also work well with red salmon instead of pink.
It is a very healthy recipe having omega oils in the salmon, calcium as well as the two vegetables.

415 g tin pink salmon
1 cup corn, taken off the cob
¼ cup chives
3 tbsp grated Parmesan cheese
Boil the broccoli and corn for a few minutes in boiling salted water until ALMOST done -do not cook till soft.

When it is almost done drain, and cut the broccoli into very small pieces.

Meanwhile lightly beat the eggs with the chives and some black pepper.

Heat a bit of oil and butter in a large frypan with a flameproof handle.
Pour the egg mixture into the frypan, scatter the broccoli, and corn over the egg, stirring lightly to distribute evenly.

Add the drained, flaked salmon, and stir lightly to distribute again.
Using a spatula, pull the sides of the egg mixture in slightly to allow the uncooked egg to set, and cook for about 5 minutes or until the underside is golden and the top almost set.
Meanwhile, heat the grill to high.
Sprinkle the Parmesan cheese over the top of the frittata. I did not sprinkle it all over as one of my visitors cannot eat dairy.
Place this under the grill for about 3 minutes or until the top is bubbling and golden.

Serve cut into quarters.
I served with home grown tomatoes and lettuce, however chips baked in the oven, and a made up salad, would go well with this.
You are getting veggies in the frittata so chips would be enough!
