Healthy Chocolate Covered Figs

These Chocolate Covered Figs are so delicious and they truly make you feel good from the inside out. Made from quality ingredients, they're dairy free, gluten free and refined sugar free, thus making them paleo-friendly too.

Made with dried Figs, they are naturally high in dietary fibre, calcium, potassium and antioxidants. The key ingredient coconut oil helps to aid weight loss, has antiviral and anti-fungal properties, strengthens the immune system, improves digestion and helps to protect the body against degenerative diseases. You just can't go wrong with this mouth-watering recipe, for which you will need:
small mixing bowl
muffin tray
12 patty pan papers


Preparation Time: 15 minutes
Setting Time: 30 minutes
Makes: 12 servings

Ingredients
12 dried figs
1 cup coconut oil, melted
2 tbsp raw cacao powder
2 tbsp carob powder
1/2 tsp ground ginger
1 tsp ground cinnamon
1 tsp vanilla extract
pinch sea salt
Optional garnishes: shredded coconut, goji berries, nuts, chia seeds

Method
Place the 12 patty pan papers in the muffin tray, and place a dried fig in each.

To make the chocolate mixture: In a small mixing bowl, combine the rest of the ingredients and stir until well combined.
Pour or spoon the chocolate mixture into the patty pans, covering the figs.

Clear a level space in your fridge or freezer and leave to set for an hour in the fridge, or half an hour in the freezer.
Optional after a few minutes of setting, sprinkle with garnishes.
