Delicious, nutritious, refined sugar free and sound too good to be true. Healthier for you and topped with tasty caramelised apple. They are great for breakfast or brunch with maple syrup and can be made lactose and gluten free.
Delicious and healthy hotcakes
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 8 x 10 cm hotcakes
Ingredients 3 Weet-Bix, crushed (gluten free if required)
1/3 cup oats (rice flakes if gluten free, see Tips)
2 cups milk, reserve 1 tbsp (lactose free or almond milk, if required)
3 tbsp maple syrup (plus extra to serve)
1 cup of flour (gluten free if required)
1 tsp baking powder
1 - 2 tbsp butter or nuttelex, to cook
1 apple, peeled, cored
1 tsp cinnamon
2 tbsp water
Put the Weet-Bix, oats and milk in a microwave safe bowl and stand for 10 minutes.
Microwave for 4 minutes. Stir to combine.
Whisk the egg, 1 tbsp milk, maple syrup and stir into the Weet-Bix and oats mix.
Add the flour, baking powder and stir to combine.
Heat oil or butter in a frypan on medium heat and add 4 - 5 tbsp batter. Spread the batter with the back of a spoon until 10 cm in size. Cook until bubbles start to form on the surface. Flip and cook the other side until golden brown.

While the hotcakes are cooking, caramelise the apple. Add water, apple, cinnamon and maple syrup to the saucepan and cook for 2-3 minutes until the apple is soft and caramelised.
