Ingredients 1 cup Soup lentil mix (split pigeon peas, split chickpeas, red lentil, split mung beans)
1 cup chopped spinach
1/2 onion, chopped
1 small tomato, chopped
1 green chili, chopped (adjust as per hotness needed)
1/2 " piece ginger chopped
4-5 garlic cloves chopped
Salt to taste
1 tsp each of cumin and coriander powder
A pinch of turmeric
1 tsp butter
I prefer cooking this soup in a pressure cooker as it cooks faster. You may cook in a soup pot as well.
Wash the lentils well and soak for 5 min in water.
Heat butter. Add the ginger, garlic, onions, green chili and fry well.
Drain the lentils and add to the pot.
Add the tomatoes and spinach. Fry.
Season with turmeric, cumin and coriander powder.
. Add salt. Add 3 cups water.
Close the lid and pressure cook for 2 whistles. If cooking in a pot, cook till lentils are well mashed.
