Healthy Osso Bucco with Thyme

This would have to be one of the simplest recipes to make, requiring only a few ingredients, but also one of the most delicious.



Osso bucco, healthy, beef, veal, dinner


Preparation Time: 10 minutes
Cooking Time: 70 minutes
Makes: 4 servings

Ingredients

1 tablespoon olive oil
4 beef or veal shanks
2 large carrots, roughly chopped
410g can tomatoes, chopped
1/2 cup cold water
2 tablespoons fresh thyme leaves
400g can cannellini beans, rinsed

Method

Heat oil in a large saucepan over medium heat.

Add the meat and cook for 2-3 minutes on each side until browned.

Add carrot, tomato and 1/2 cup cold water. Cover with a lid.

Bring to the boil, then reduce heat to low.

Simmer for 1 hour or until the meat is tender

Add thyme and beans.

Season with salt and pepper.

Cook for 3 to 5 minutes or until heated through.

Serve with mashed potatoes or rice.
