Ingredients 2 cups walnuts
1 cup dates, pitted
1 avocado, cut into bits
1 tbsp honey
¼ cup coconut oil
½ tsp vanilla extract
½ cup cacao powder
¼ cup coconut, for dipping
¼ cup ground almonds, for dipping
Put the walnuts and dates into a food processor or blender.
Pulse for about a minute or until they are finely chopped and sticking together.
Add in the remaining ingredients apart from the coconut, and blend until they are all mixed together, and it is moist.
Dough should be thick and look like this
Take out the dough from the processor or blender, and form into a big ball.
Put the coconut into a flat dish.
Break small pieces of the larger ball and with moist hands, roll them into small balls.
Roll them in the coconut to coat as evenly as possible.
I also rolled some in ground almonds.
Once they are all done, put them into the fridge to set and they will be a fudge type brownie.
Great as a snack as they are only about 60 calories each and far healthier than a biscuit which has a lot of sugar in it.
