Healthy Sweet Potato Chips

I was looking for an alternative to use instead of corn chips for nachos, something less salty and not saturated in fat. These sweet potato chips are exactly what I was looking for. Completely healthy, perfectly crispy. They were excellent for nachos, and also for snacking.

Sweet potato chips

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 4 servings

3 small sweet potatoes (approximately 750g)

Preheat the oven to 150C.
Peel the sweet potatoes.
Use a mandolin to thinly slice the sweet potatoes into round chips. You could also use a knife - you want to get the chips 1-2mm thin.

Spread the sweet potato chips out in a single layer on a baking tray lined with baking paper.
Bake in the oven for 25 minutes or until lightly browned and crisp.
