Hearty Tomato Soup

A hearty, warming soup is the perfect dinner on a cold, wintry night, and this soup sure fits the bill.

It is filling and absolutely delicious. Best of all, it's really healthy.

Serve with crusty bread if you like some carbs with your dinner. We served with some haloumi (pictured in the right bowl below).



Tomato soup


Preparation Time: 15 minutes
Cooking Time: 60 minutes
Serves: 8

Ingredients
2 tbsp olive oil
2 large garlic cloves
2 large brown onions
3 celery stalks
1 zucchini
Fresh herbs (eg thyme, rosemary, oregano)
4kg roma tomatoes
4 cups water and/or vegetable stock
1 tbsp balsamic vinegar

Method
Prepare the ingredients: roughly chop the garlic, onions and put to one side. Chop the celery and zucchini and put to another side. Finally, chop the tomatoes.
Heat the oil in a large pot over a medium heat. Add the garlic and onion, and saute for a few minutes until the onion starts to turn translucent. Stir through the fresh herbs.
Add the celery and zucchini and cook for about 5 minutes, or until the vegetables start to soften.

Add the tomatoes and mix well. Pour in the water/stock and vinegar. Place the lid on the pot, turn the heat to high and bring to a boil.
Remove the lid, lower the heat and simmer for 45 minutes, or until the vegetables have cooked through and the liquid has reduced.

Blend with a stick blender and serve.
